Natural yeast, whole cluster co-fermentations are the first step in the process with pigeage done by foot. After primary fermentation the wines are placed in oak barrels for aging in their cold, subterranean cellars ensure that the evolution of their wines proceeds slowly.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cspan\u003eThe Reserva is a wine made from the oldest vines near the village of Aguilera. Here the vineyards are mainly Tempranillo, but like old vines the world over, many other varieties, red and white, are mixed in. Rather than separate these varieties, Jorge feels that a true representation of these sites is best captured by co-fermenting them. This cuvée sees nearly three years in barrel – half of that time waiting for the malolactic fermentation to finish! It's a hedonist cuvée of 95% Tempranillo and 5% other grapes from some of the oldest grapes in the village. It fermented in concrete with indigenous yeasts followed by a slow malolactic in 228-liter French oak barrels, mostly used, where the wine matured for 35 months. It reveals very good integration of the oak that is neatly folded into the wine. It shows the tannic structure of the 2019 vintage. 23,875 bottles and 430 magnums produced. Ribera del Duero does not have much of a tradition for white wines, so the initial concept was to make something simple and humble. Instead, they discovered through the cellaring and consistent tasting of verticals of Flavus over the years that the wine is capable of improving in bottle for a decade or more, leaving tasters stunned by the unique, complex flavors which develop. There is no designation for Ribera del Duero blanco, so while this mighty blanco may be a “Reserva” qualitatively and spiritually, bureaucratically, it carries the humble \u003c\/span\u003e\u003ci\u003e\u003cspan\u003eVino de Mesa\u003c\/span\u003e\u003c\/i\u003e\u003cspan\u003e designation. These undesirable vineyards were ancient, unproductive massale selections of Tempranillo mixed with a diverse range of other varieties, including a high proportion of white grapes – all “useless” in a region that prized extraction, production, and the everything new and shiny.\u003c\/p\u003e\n\u003cp\u003eJorge’s years at DRC only focused his vision and conviction that terruño and tradition matter. His vineyards, some planted before phylloxera, or right after it struck, were planted exactly as they had been for centuries – predominantly Tempranillo with a wide genetic diversity alongside Albillo, Tempranillo Gris, Cariñena, Garnacha, Bobal, Bruñal and others so obscure that they haven’t been identified yet. Farming is certified organic and Isabel, an architect, supervised the renovation of three ancient cellars dating to the 15th century dug deep into the bedrock under the village. Natural yeast, whole cluster co-fermentations are the first step in the process with pigeage done by foot. After primary fermentation, the wines are placed in oak barrels for malo and aging. Their cold, subterranean cellars ensure that their wines’ evolution proceeds slowly, allowing for the development of greater complexity and nuance.\u003c\/p\u003e\n\u003cp\u003eDominio del Águila’s vineyards are all located around the village of La Aguilera – so in that sense, they are all village wines. They sell much of their fruit selecting the best for their wines. Pícaro Clarete \u0026amp; Tinto are field blends, selected from parcels chosen for their quality and response to vintage conditions.\u003cspan\u003e \u003c\/span\u003eThe Reserva comes from vines planted before 1930, on sandy clay-limestone soils, and utilizing all the varieties present in the vineyard to add complexity to the Tempranillo. Pena Aladas is a zone within the village of La Aguilera. The soils are thin, sandy clay over hard limestone bedrock. The structure of the fruit grown in Pena Aladas requires a long period in oak to soften, evolve, and open up. The goal is not to make a Gran Reserva because it was expected, but because the terroir demanded it. Canta la Perdiz is a single vineyard wine made from vines between 100 and 150 years, with many ungrafted vines. The soils here are shallow, gravelly clay over a friable and horizontally fractured limestone. With a softer structure than Pena Aladas, it requires less time in barrel and shows a wildly aromatic and floral aspect that sets it apart from the other sites that Jorge and Isabel farm.\u003c\/p\u003e\n\u003cp\u003eVarious versions of Albillo are planted in the vineyards of Dominio del Águila including two rare, small parcels that are planted entirely with Albillo. Although the D.O. didn’t recognize white wines until 2019, Jorge felt that his best vines of Albillo – small clusters of deeply golden berries – demanded to be segregated and made into a tiny production white wine first commercially produced in 2010. The first part of the aging was in 225-liter barrels and the second one in 20,000-liter oak vats, and the élevage lasts 10 years between oak and bottle. It's a year that combines power and elegance; it's concentrated but has subtleness. I had a unique opportunity to taste it from magnum one year ago and was truly impressed. This tasting was consistent with those sensations. 2014 was a good vintage in the zone, a year with good rain and a big crop, not as powerful as 2012 or 2015 but a year with finesse. The wine feels very balanced, lower in alcohol and with integrated oak, crunchy, fresh and still young. It feels quite classical; it's fine-boned, elegant but also powerful, more like the Únicos from yesteryear. The altitude, over 1,000 meters, and the north-facing exposition helped too. The tannins feel quite polished, especially when compared with the 2022 Rey Moro; it's gentler, and the wine is silky and round, a rare feature that year. It will gain finesse with time in bottle, as warmer years need more time in bottle.
