He ensured that he carried forward the rich legacy of the Comtes Lafond family in the vintages produced in the Sancerre vineyards.\u003c\/p\u003e\n\u003cp\u003eAfter a few years, Patrick acquired the Clos de la Poussie, which was regarded as the mythical vineyard of Sancerre for many reasons. The strategic location of this vineyard, coupled with its natural amphitheatre-like structure facing south has helped this vineyard make one of the most exceptional crus in the world today – the Haut de la Poussie.\u003c\/p\u003e\n\u003cp\u003eGrapes are destemmed before pressing, which is completely gravity-fed, a process which avoids any harshness or stalkiness. This process results in 80% free-run juice. Thermo-controlled fermentation at 60°F in stainless steel tanks for six to eight weeks, before maturing from three to six months on natural lees, with regular stirring. The wine is blended seven to eight months after harvesting and stored in glass-tiled tanks.
