Grapes are dried in traditional drying rooms, without forcing temperature or humidity controls. Then they rest on racks for 99 days and are crushed in early January. Aged for 8 years in 50-100 hectolitre Slavonian oak barrels.
A fantastic, Barolo-like nose of great aromatic dimension and class. A palate of huge concentration with such pure lines: extremely intense and focused. Lovely grainy tannins and a cedary quality to the whole. This is a monumental wine which dazzles with its complexity and beauty. Food match suggestions It can be paired with red meat, game and mature cheese, but is also perfect at the end of a meal or as a meditation wine.
"Wow. Such a complex nose, with a base of dried cherry, spruced up with hints of mild coffee and walnuts. Then there are dried flowers, wild herbs and spices, such as tarragon and cloves. Subtle hints of dried banana and apricot, too. The palate is full, super sleek, intense and well-balanced, with tight, spice-coated tannins that drive everything forward. Long, long finish.
