Furthermore, it takes at least five years before new vines produce grapes that are up to Yquem's very strict standards. Twelve hectares of vines are thus non-productive every year. Yquem is planted with two grape varieties: Sémillon (75%), which produces a rich wine with body and structure, and Sauvignon Blanc (25%), an early-ripening but less reliable producer, which contributes aromas and finesse.

Château d'Yquem's microclimate is in the heart of a 20 km strip of land along both sides of the Garonne Valley where all of Bordeaux's sweet and semi-sweet white wine appellations (Sainte Croix du Mont, Loupiac, Cérons, Cadillac, and Barsac) are located.

At the winery, the grapes are pressed 3-4 times and the juices of varying sugar contents blended before barrel fermentation in 100% new oak, a rather rare phenomenon in Sauternes. At Chateau d’Yquem, only the finest stave oak barrels from central France are used and during the fermentation process each one is closely monitored. Fermentation stops naturally when the alcohol content reaches 12.5° to 14.5°, depending on the sugar content of the must (the ideal being 13.5° with 120-150 g/l of residual sugar). Each wine, grouped according to the days on which the grapes were picked, is aged 6-8 months, after awhich a preliminary blend is made and carefully tasted. Barrels containing those wines that are deemed acceptable are moved to the aging cellar where they spend 20 months. During this time, each barrel undergoes 2 top-ups, 15 rackings and fining to remove sediments. The aged wines are then re-tasted blind and those deemed worthy are included in the rigorous blending session that determines the blend of the vintage. The Chateau d’Yquem namesake cuvee is bottled during the third week after its harvest.

#34 in James Suckling Top 100 World 2024 - "Dreamy, subtle aromas of dried fruit such as apricots and mangoes, but also fresh lemons and pears. It has 148 grams per liter of residual sugar, making for a relatively rich style and the sweetest Yquem since 2017. Pale lemon-gold colored, perfumed notes of orange peel, juicy peaches, grapefruit, and honeycomb slowly emerge from the glass, followed by suggestions of jasmine tea, fresh ginger, and lime blossoms. The palate is fantastically satiny, with great tension and loads of spicy sparks complementing the citrusy flavors, finishing with epic length and a zesty lift. 54,000 bottles were made.
