To enhance ripening, the harvest takes place plot by plot.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eAlthough balance is the byword at all the von Neipperg estates, every wine inevitably has its own profile reflecting its specific terroir. Château Peyreau's personality displays charm and roundness. It is a joy to drink, even when quite young.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eHarvesting by hand, into small crates to avoid bruising. Sorted before and after destemming. No crushing. The grapes arrive on a conveyor belt. Fermented in temperature-controlled concrete vats for 15 to 21 days depending on the vintage. Extraction by pneumatic pigeage (punching down the cap). Malolactic fermentation and aging in barrels used for either one or two previous vintages, on fine lees, for 12-18 months.
