The grapes are 100% destemmed and pressed very slowly at low pressure to emphasize pure fruit flavors and achieve a silky mouthfeel. Since their first vintage in 2014, Nicolas-Jay has quickly earned recognition as one of the premier producers of Pinot Noir and Chardonnay in the Willamette Valley.\u003c\/p\u003e\n\u003cp\u003eNestled in the hills of the Yamhill-Carlton appellation, Nicolas-Jay’s Bishop Creek Vineyard spans 13.5 acres, 11 planted to Pinot Noir. The majority of the vines were planted between 1988 and 1990 and are own-rooted. Elevations range from 270 to 600 feet, with predominantly North–South plantings on Willakenzie series marine sedimentary soils, adding to the site’s diversity. Since Domaine Nicolas-Jay acquired the vineyard in 2014, all farming has been organic. Bishop Creek yields small, thick-skinned berries that contribute to a distinctly textured and age-worthy Pinot Noir.
