They built relationships with s\u003cimg\u003eome of the region's finest vineyards and eventually took ownership of Bishop Creek Vineyard in the Yamhill-Carlton AVA, after being captivated by the expressiveness of the site. The vineyard, planted in the late 1980s on ungrafted rootstock, contributes to every multisite wine, imparting a savory quality and tight-knit structure that is consistent throughout the Nicolas-Jay range.\u003c\/p\u003e\n\u003cp\u003eIn the cellar, Jean-Nicolas uses spontaneous native yeast fermentations. The grapes are 100% destemmed and pressed very slowly at low pressure to emphasize pure fruit flavors and achieve a silky mouthfeel. The wines are aged in François Frères barrels (25-50% new) and are left unfined and unfiltered. Since their first vintage in 2014, Nicolas-Jay has quickly earned recognition as one of the premier producers of Pinot Noir and Chardonnay in the Willamette Valley.\u003c\/p\u003e\n\u003cp\u003e“Own-Rooted” Pinot Noir showcases several old-vine sites in the Willamette Valley, each at least 30 years old, and planted at a time when rootstock was relatively rare in Oregon viticulture. The Bishop Creek Vineyard supplies a portion of the blend, showing off its characteristic black fruit. Hyland Vineyard, the oldest in the McMinnville AVA, sits atop a hillside looking over the Van Duzer Corridor, and its 45 year old biodynamically farmed vines supply a high-toned red fruit and floral element. 1990-planted Pommard from Nysa Vineyard completes this wine, supplying elegant red fruit and spice.
