Mac & Billy Cellars 'M' Cabernet Sauvignon 2021

Over the last two decades, McPrice “Mac” Myers has been crafting wines of depth and balance that showcase the multiple terroirs of the Central Coast. A lifelong, self-proclaimed "food and wine geek,” Mac was a quick study and almost immediately had the press lauding his wines from near and far.

Billy Grant first collaborated with McPrice Myers in 2017 as an industry consultant. In 2021, he contributed his start-up M Cab label to the McPrice Myers Portfolio becoming a partner and stepping into the role of Business Development. Over the past 20 years, Billy has served as partner, investor, consultant, and expert resource to wineries, vineyards, and affiliated businesses in the Paso Robles area.

Destemmed, 3-5 day cold-soak, fermented in stainless steel and small open top bins, with pump-overs occurring during cold-soak and punch downs during fermentation. Aged 20 months in 225 and 228 liter French and American oak barriques, 20% of which were new.

Deep ruby-purple, it has alluring aromas of cassis, pencil shavings, dried herbs, leather and lavender, plus classy touches of oak spice. The full-bodied palate is concentrated and powerful without going over the top. It has abundant, grainy tannins, flinty streaks and plenty of refreshing acidity to carry the long finish.
