In San Giacomo di Teglio, a village in the Valtellina Superiore DOCG, Sandro Fay began investing in the restoration of the small vineyard that belonged to his family in 1971. By 1973, Fay had officially established the Azienda Agricola Fay and had begun gradually expanding the vineyard by adding additional plots of land. He carefully selected vineyards with various soil compositions and altitudes between 350 and 900 meters on steep mountain sides. Today, Marco and Elena, Sandro's children, have taken over the family vineyards.
Marco trained in Barolo after studying enology in Trentino. When he returned to the terraced family vineyards, he translated those experiences into the production of exceptional single-vineyard wines based on the variety Chiavennasca, also known as Nebbiolo outside of Valtellina. The majority of Fay's vines are located in Valgella, one of the five sub-zones of Valtellina Superiore, the DOCG's easternmost region. Sforzato di Valtellina, Valtellina Rosso, and Valtellina Superiore are all included in the region.
The Valtellina Superiore region, where Marco Fay concentrated his efforts, has been recognized for its elegant, light, and ruby Nebbiolo, despite the fact that the designation "Rosso" is somewhat informal. The Sforzato is a red wine of the Amarone variety made by pressing partially dried grapes three months after harvest. Sandro Fay stands out as one of the best producers of Valtellina Superiore because its wines are both young and lively and can be enjoyed over time.
After destemming and pressing, the wine rests on the skins for six days before fermentation in stainless steel with native yeasts. Malolactic conversion occurs shortly after. 4 months in stainless steel and 3 in bottle.
