For several generations, Domaine Jean-Marc and Hugues Pavelot, located in Savigny-les-Beaune (Côte de Beaune, Burgundy), has been passed down from father to son, thus guaranteeing the know-how that made its reputation.
Today, the property extends over 13 hectares, mainly in the town of Savigny-les-Beaune but also in that of Beaune and Aloxe-Corton.
Savigny-les-Beaune 1er Cru 'La Dominode' terroir is facing south and the soil, marly and deep, is embellished with a few angular pebbles. The name "Serpentières" most certainly originated from the once numerous presence of snakes attracted by the vicinity of a few springs. Age of the vines is 60+ years and wines are aged for 12 months in barrels (25% new).
"The 2022 Savigny-lès-Beaune La Dominode 1er Cru, one of Jean-Hague Pavelot's favorite cuvées this year, has a generous bouquet of black plum, raspberry, and a touch of pressed white flowers emerging with time. Very well-defined and focused. The palate is medium-bodied with slightly edgier tannins than other Premier Crus - maybe a bit more angular at the moment, yet that lends plenty of tension towards the finish that fans out beautifully.” - 93 Points, Vinous
