David Duband - Les Terres de Philéandre Savigny-lès-Beaune 2021

IN STOCK

The small negociant project known as Les Terres de Philéandre, launched in 2018 by David Duband, is named after his twins Philomène and Léandre.  The first grapes purchased were from 1er Cru Les Serpentières in the village of Savigny-les-Beaune. More long-term contracts followed, giving substance and stability to the project. Duband’s aim is to explore appellations not represented under his eponymous label, as well as new methods in the cellar such as sulfur-free vinifications and fermentation and ageing in concrete eggs. The range begins with an Aligoté and VDF Pinot Noir from the Hautes Côtes de Nuits, then leads to the standout sans soufre Pinot Noir “Célénie,” and is rounded out by a series silky and complex Savigny-les Beaune cuvées. Through consistent observation and adaptation, the wines from Les Terres de Philéandre have quickly become some of the most compelling values we have tasted in the Côte d’Or!

60% whole cluster fermentation, 15 day cuvaison with 5-7 punch downs per day and sporadic pump overs. Following pressing, the wine settles two weeks in barrel before being transferred for ageing. Aged 13 months in 30% new barrels and 70% 1-5 year-old barrels, followed by a minimum of 3 months in tank prior to bottling without fining or filtration.
