Wines Caudrina, all D.O.C., are the expression of long experience and considerable vitality and developmental ability.

Stubborn as most of the winemakers from the Langhe, Romano Dogliotti remains tied to the traditions but open to new technologies of which wanted to equip his new winery.

The result is a wine production at the highest level, worthy heir of the noble Piedmontese tradition but open to the future, with attention to different market needs and a clientele of connoisseurs increasingly careful and documented.

Immediately after the harvest, done only by hand, the grapes are softly pressed, clarified, and filtered. The grape juice is preserved in refrigerated tanks at 2 °C below zero until it is time for the temperature controlled fermentation, which is made in autoclave with selected yeasts to obtain a lively wine.
