Situated on the oriental coast at Saint-Antoine, in the commune of Ghisonaccia. A large part of the vineyard is situated on a plateau between 100 and 150m of altitude, at the foot of the mountains and 10km from the sea. The subsoil of this plateau is made of clay. The vineyard enjoys full sun. The domain is lucky enough to have very diverse land, with a part of its vines planted on river pebbles. Range of vines: Sciaccarellu, Niellucciu, Vermentinu, Grenache, Syrah, Cinsault, Biancu Gentile, Muscat petits grains, Genovese, Rimenese, Minustellu, Carcaghjolu neru. The vineyard is now HVE certified (high environmental value) and is under conversion to organic farming.
After several years of bringing grapes to wine-growers’ cooperatives, in 2017 Laura and Andria created the Mondage Domain and left their respective jobs to fully commit to agriculture. The two first years of manufacturing were done in the basement of the family home. In 2019, the new, semi-underground cellar with a gravity reception of the grapes was created, with a large range of choices of winemaking and aging containers (wooden vats, concrete tulips, stainless steel, sandstone jars and barrels). The choice to vinify in stainless steel, concrete, and wooden containers allows them to offer a wide variety of red, white and rosé wines.
Destemmed. Long vatting with offloading and daily alternating between reassembly and pressing. Alcoholic fermentation between 26° and 28°C in cement containers. Aged in a cement container.
