Zymé Il Bianco - From Black To White 2018

The minimalist label plays on the black/white contrast, alluding to the natural genetic mutation undergone by the Rondinella grape, from red grape to white.

Color is luminous, with greenish and pale yellow highlights. Impressive glycerol-derived viscosity.

Bouquet has delicate notes of spring wild flowers, fruit, and country herbs, acacia, primrose. Also notes of apple, pink grapefruit, mint, vanilla and elderflower. Delicate and elegant, with perfectly-balanced aromatics .

On the palate is seductive, rich, complex, tangy, minerally, very lengthy. Suitable for long aging, but also a lovely fresh and mineral wine to drink in its early stages.

This wine is excellent as an aperitif wine. Fresh and delicious to pair with shell fish, fish, risotto and asparagus, chard and soups.

"Vivid straw color. An aromatic nose hints at Manzoni Bianco, with nuances of white pepper and ginger complementing pomaceous orchard fruit aromas. Then dense and suave with flavors of fennel, pear and apple, plus repeating notes of ginger on the long slightly warm finish (the label reports 13% alcohol). A complicated blend of 60% Rondinella Bianca (a mutation of the red Rondinella grape), 15% Gold Traminer, 15% Kerner and 10% Incrocio Manzoni that spent 6 months on the lees." - 90 points, Ian D'Agata Vinous
