For several generations, Domaine Jean-Marc and Hugues Pavelot located in Savigny-les-Beaune (Côte de Beaune, Burgundy) has been passed down from father to son, thus guaranteeing the know-how that made its reputation.
Today, the property extends over 13 hectares, mainly in the town of Savigny-les-Beaune but also in that of Beaune and Aloxe-Corton.
This diversity is very present in the vineyard of Savigny-les-Beaune which covers two hills and the valley which connects them. Its altitude is between 220 and 360 meters. The nature of the soil is very varied and its exposure is oriented south, south-east and north-east.
This wine comes from two very different plots: The place called “Les Planchots” (55 years old vines) located in the plain, on deep sandy soil, gives a fat and rich wine dominated by aromas of citrus fruits (grapefruit, etc.) and dried fruits. And a place called "Les Vermots" (15 years old vines) located on hillsides on limestone soil, gives a lively wine with a dominant mineral and fruity (peach, etc.) character. The blend of these two plots gives a balanced, very aromatic and round wine.
