The Voirin-Jumel household is typical of many vigneron relationships in France. Patrick Voirin’s family had vineyards in Grand Cru Cramant, and Valerie Jumel’s family owned vineyards in Chouilly. So the synthesis is a happy mix. They own 12 hectares of vines spanning the villages of Cramant, Avize, Oger, Mareuil-sur-Aÿ, Vertus, Oiry, Verneuil and Chouilly – and vines have an average age of 30 years. All this helps them to produce a small range of very individual and elegant wines.
This cuvée is crafted through a brief maceration of Pinot Noir to extract its color and aromas before fermentation begins. Vinified using the finest Pinot Noir grapes of the year, selected for their ripeness and impeccable health.
Often vintage-dated (though not always), this cuvée is particularly influenced by the quality of the harvest. The process is guided by the winemaker’s intuition, producing this rosé only when the harvest conditions are ideal, and in varying quantities.
Our decision to vinify this rosé using the Saignée method is driven by passion—a choice by the winemaker to embrace the terroir and fully unlock the potential of the parcel.
La Saignée is a characterful wine that offers a truly unique tasting experience. It boasts an intense color with pronounced, fruity flavors.
A pretty garnet color with coral nuances. Red berry, pink grapefruit, with hint of light spices give great flavors in your nose. In mouth, an incredible freshness with creamy notes of crunchy red berry. This juicy wine, salivating, long and intense will marry perfectly with Asian food or with strawberry pie with dark chocolate.
