1959, the year in which William Fèvre declared his first crop, marked the birth of the domain. Descended from a family which had lived in the Chablis region for over 250 years, it was only natural that he set up as a winemaker with 7 hectares of vineyards.
Over the years the domain has acquired new vineyards in Chablis, all located in the historic terroirs. William Fèvre has become one of the biggest land owners in Chablis with 78 hectares of prestigious vineyards, of which 15.9 are classified as Premiers Crus and 15.2 as Grand Crus.
Les Clos is the largest and most prestigious Grand Cru in Chablis, so it comes as no surprise that Domaine William Fèvre stakes its claim as the most influential landowner here. They oversee eight plots spanning 4.11 hectares (more than any other domaine), with many of the older plots planted by William’s father as far back as 1947 and 1948. The domaine’s parcels are all situated on dense, deep clay soil resting on a bed of limestone 30 inches below the surface in the slightly cooler microclimate at the top of the slope. This shining example of Les Clos is remarkably complex; a powerful wine with tremendous aging potential.
“Domaine William Fèvre’s 2011 les Clos is also a simply magical wine in the making. The superb bouquet shows of great depth and complexity in its mix of apple, lemon, tart orange, very complex, flinty minerality, spring flowers and a gentle topnote of lime zest. On the palate the wine is deep, full-bodied, pure and supremely elegant, with a rock solid core, stunning focus, length and grip, impeccable balance and a veritable mineral bath of a finish. A brilliant young bottle of les Clos.” - 96 Points, John Gilman
“The Fevre 2011 Les Clos represents another vivid contrast with a corresponding 2012. The intensity of attack and grip of the latter are replaced here by mineral and herbal complexity that sneak up on your nose and a palate notable for its delicacy, transparency and lift. True, you could say that this is looser than the 2012, but that’s a judgment relative to a rather extreme exemplar of the latter vintage. Harmonious ripeness of white peach and citrus is shot-through with saliva-inducing oyster liqueur, incorporating shimmering suggestions of things saline, alkaline, seaweed-like and stony.” - 94 Points, Robert Parker’s Wine Advocate
“A largely mature nose freely offers up its aromas of white orchard fruit confit that are nuanced by moderate Chablis character that includes iodine, quinine and oyster shell. There is fine richness to the relatively generous medium-bodied flavors that exude the hallmark minerality of a fine Les Clos, all wrapped in an almost salty finish that displays very good if not extraordinary depth and persistence.” - 92 Points, Burghound
