Bodegas Mauro expanded its business to the lands of the Toro region at the end of the 1990’s with its San Román wines.

The García family’s interest in Toro began in 1995, monitoring various plots of old vineyards in the northeast of this Designation of Origin region. In 1996, they purchased their first vineyards and land to move further into this project in the towns of Pedrosa del Rey, Villaester and San Román de Hornija in the province of Valladolid. The winery in Pedrosa del Rey was inaugurated in 1997 and the vineyard surface area was expanded a few years later in Morales de Toro.

San Román Bodegas y Viñedos is Mariano García and his family’s second winery in the Duero Valley following Bodegas Mauro (1980). The business has been expanded with Garmón Continental (their exclusive new project in Ribera del Duero which began with the 2014 vintage). 

Three different approaches to Duero Valley viticulture based on respect for each territory’s unique characteristics to create a unique winemaking philosophy.

After destemming, the berries are gravity transferred to vats with varying capacities for the beginning of alcoholic fermentation using native yeasts. Ageing occurs in French and American oak barrels also of varying capacities, which are 30 percent renewed each year.

"The very classical 2021 San Román showcases the house style of ripe, concentrated and generously oaked reds made from Tempranillo (or Tinta de Toro) grapes but with the balance and poise to develop and integrate the oak with time in bottle. Furthermore, 2021 was a great vintage in the zone for them—cooler, with adequate rain and excellent balance between acidity, alcohol (14.5%) and structure. It matured in French oak barrels of different sizes and aged for 24 months. It has notes of black fruit, hints of graphite, licorice and ink and a medium to full-bodied palate with very fine, elegant and polished tannins." - 94 Points, The Wine Spectator
