Antinori Castello della Sala - Umbria IGT 'Cervaro della Sala' 2013

The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century, Monaldeschi della Cervara. A blend of Chardonnay grapes and a small quantity of Grechetto make a wine that can age over time and represent the elegance and complexity of this unique estate. Cervaro della Sala is one of the first Italian white wines to have malolactic fermentation and aging take place in barriques. The first vintage of Cervaro to be produced was the 1985 vintage.

“This has green and yellow tints and an intense nose of fresh hay, beeswax and butter. The palate is classy and complex, showing flavors of pear, herbs, toast, flint and salted butter. A lively citric charge gives the acidity a nervy edge but there’s also lovely ripeness, depth and weight followed by a long and savory herbal finish. “I never get enough of this beautiful wine. The 2013 Cervaro della Sala is mostly Chardonnay (80%) blended with an Umbrian native grape, Grechetto. The results are glorious, and this vintage represents slight tweaks to the winemaking style in favor of more finesse and elegance. Back in 2009, Cervaro della Sala was executed in a heavier style. The aging potential of this celebrated white wine has been proven and demonstrated with tasting after tasting. This vintage is balanced and fresh with brimstone, stone fruit and creamy peach.
