Granito del Cadalso grew from a partnership to preserve the vineyards of Cadalso de los Vidrios, in the Sierra de Gredos. Founded in 1956 by more than 400 local families, the Cooperativa Cristo del Humilladero once drew grapes from nearly 1,000 hectares. As Madrid expanded and development made selling land more profitable than farming, over 80% of the area’s original vineyards disappeared.
Seeking a future for the remaining vines, cooperative president Ricardo Moreno approached neighbors Dani Landi and Fernando García of Comando G. Together, they worked to improve farming and winemaking so growers could earn a living from their vineyards and protect the region’s heritage. The partnership’s first vintage was 2015, with importer Eric Solomon joining the collaboration to create Granito del Cadalso.
Made from 100% Garnacha, this wine comes from sustainably farmed vineyards rooted in sandy, granitic soils at 500–1,000 meters elevation. Vines range from approximately 20 to more than 70 years old. Grapes are harvested by hand and fermented with native yeasts in concrete tanks, with a 15–20 day maceration and twice-daily pump-overs. The wine then ages for six months in concrete, keeping the emphasis on fruit and vineyard character without adding oak flavors.
