Giusto Occhipinti of COS is a benchmark producer in the Vittoria appellation of Sicily, and certainly one of the most important, influential, producers in all of Sicily if not Italy as a whole. The winery was founded in 1980 by three friends, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. The initials of their last names form the winery’s name. 

Pithos (Greek word for amphora) Vittoria Rosso organic wine is an elegant garnet red wine made by the antique method from Nero d’Avola and Frappato grapes, expressing the artistic work this winery performs to produce excellent wines. Fermentation occurs spontaneous in terracotta amphorae, on the skins with indigenous yeasts. Aged in amphora and bottle.

Antique amphoras in terracotta have always been used to make wine. As with many things, these techniques were forgotten in Sicily, but we know that Georgia, considered the center of winemaking’s origins, amphorae were widely used. A wine that is born in this way and aged in these vessels allows to have a wine that is pure and authentic because the vessel is neutral and doesn’t add anything to the wine.

This is a beautiful fruity and spicy medium body red wine with a nice long finish.
