For several generations, Domaine Jean-Marc and Hugues Pavelot, located in Savigny-les-Beaune (Côte de Beaune, Burgundy), has been passed down from father to son, thus guaranteeing the know-how that made its reputation.
Today, the property extends over 13 hectares, mainly in the town of Savigny-les-Beaune but also in that of Beaune and Aloxe-Corton.
Savigny-les-Beaune 1er Cru 'La Dominode' terroir is facing south and the soil, marly and deep, is embellished with a few angular pebbles. The name "Serpentières" most certainly originated from the once numerous presence of snakes attracted by the vicinity of a few springs. Age of the vines is 60+ years and wines are aged for 12 months in barrels (25% new).
This beautiful ruby red wine seduces with its elegance and liveliness. Its pure nose combines the fruit and the minerality specific to the locality. In the mouth, the structure is harmonious, fresh and of good length, all the subtlety of a vine of respectable age.
"The 2023 Savigny-lès-Beaune La Dominode 1er Cru showed a small reduction on the nose: blackberry, briar and light white pepper scents unfold in the glass. The palate is medium-bodied with fine tannins. It's perhaps the most peppery of the Savigny cuvées, although the Gravins has more precision on the finish. Drink: 2026-2036. (Jan 2025)" - 90-92 Points, Vinous
"A defiant black purple, this wine is so intense in all compartments. Then surprisingly racy on the palate just when I ws expecting an overload of black fruit. In fact, this is much redder in profile, fresh cherry and raspberry, underpinned by a crystalline limestone notion. Very persistent. (Dec 2024)" - 91-94 Points, Jasper Morris MW, Inside Burgundy
