Hervé Joyaux Fabre, owner and winemaker of Fabre Montmayou, was born in Bordeaux, France, to a family of wine negociants. When he arrived in Argentina in the early 90’s looking for opportunities to invest in vineyards and start a winery, Hervé was impressed by the potential for Malbec in Mendoza.

As a true visionary, he bought very old Malbec vineyards, planted in 1908, and built the Fabre Montmayou winery with real boutique style and essence. Once the winery in Mendoza was established Hervé then decided to buy vineyards and a winery in Rio Negro, Patagonia. He realised the unique cool climate of this southern region combined with the “terroir” made it possible to create great wines that are very different in style from those produced in Mendoza.

His passion and “savoir faire” did the rest. Also, his partnership with his wife, Diane, enabled him to begin producing exceptional wines that have achieved international acclaim and are enjoyed in over twenty countries. Hervé crafts the wines, meticulous in his approach to ensure every step of the process is carried out to his instruction. Diane takes control when the wine is ready to be shipped out to customers. She looks after everything from the corks to customers and beyond.

The winery was built in Vistalba – Lujan de Cuyo, 18 Km North of Mendoza city at 3800 feet elevation (1,150 meters of altitude), and is surrounded by the first 15 hectares / 37 acres of Malbec vineyards that Bodegas Fabre S.A bought.

For the Fabre Montmayou line of wines, the owners decided to buy exclusively old-vine vineyards in the best wine growing areas of Mendoza.

Deleafing and green picking is carried out in December. Harvest is realized manually in small trays of 20 kg in order not to damage the grapes. Double selection is performed: first selection of bunches and a second selection grape by grape.


Cold maceration is carried out for 5 days prior to fermentation which takes place at a controlled temperature  in order to preserve the optimum expression of the “terroir”. 4 pump-overs per day and a long maceration period of 20 days.
100% exclusively in French oak barrels for 16 months.                                                          85% Malbec, 10% Cabernet Sauvignon, 5% Merlot

Deep red colour with dense violet tones. The bouquet, attractive and charming, provides an explosion of red cherry and plum fruits. The French oak adds delicious hints of vanilla, coffee, and interesting complexity. On the palate, the wine is rich and well structured with soft tannins. A long and elegant finish. Superb combined with delicate dishes, grilled meats, and chocolate desserts.

"This opens up with dark currants, licorice, asphalt and a hint of mint on the nose. Some spices derived from aging. The palate is medium- to full-bodied, sleek and elegant in the context of its creamy and rich style. Bright, with caressing fine-grained tannins. This is made from the oldest vineyard on the property, which was planted in 1908. Already drinking well, but will benefit from a couple of years of cellaring.
