Weingut Hild is a small family estate in Wincheringen, in Germany’s Obermosel—or Upper Mosel—where the landscape bears little resemblance to the steep slate vineyards associated with the central Mosel. Here, near the Luxembourg border, the soils are rich in limestone and form part of the geological sweep of the Paris Basin, linking the region more closely to places such as Chablis and Sancerre.
Matthias “Matz” Hild and his son Jonas farm approximately five hectares, focusing on Elbling, one of Europe’s oldest cultivated grape varieties. With the support of Matthias’s wife, Dorlies, the family works to preserve the Obermosel’s historic terraced vineyards—demanding parcels that must be farmed largely by hand and produce naturally modest yields. Their work is as much an act of cultural preservation as it is winemaking, safeguarding a grape and vineyard tradition increasingly at risk of disappearing.
Elbling is treasured here not for richness or grandeur, but for its honesty, refreshment, and unmistakable sense of place. Its wines are brisk, energetic, and intensely chalky, with the kind of vivid acidity that invites another sip.
Hild’s Elbling Sekt Brut is sourced from vineyards within four kilometers of Wincheringen. It undergoes a slow, 21-day fermentation in stainless steel, completes malolactic fermentation, and rests on its lees for 9 to 18 months before disgorgement, with a dosage of 10 to 12 grams per liter. The result is a lively, limestone-driven sparkling wine that captures Elbling’s joyful simplicity and the singular character of the Obermosel.
