David Bonomi, Edgrado del Popolo, and his son Santiago founded PerSe Wines in 2012 with the intention of making pure mountain wines.  They planted vines on land they farm in conjunction with the Monks of the Monasterio del Cristo Orante.  The Monasterio zone of Gualtallary is located in the northwest corner of Mendoza's Uco Valley at approximately 1500 meters elevation.  The soils are comprised of intense white chalk and decomposed granite and their climate is one of the coolest wine growing regions in Argentina.  The land is farmed organically (non certified) and each plot has particularly unique qualities.  All vines are head trained and most are planted at less than 0.5 hectares per parcel, at different densities, from 2,300 - 7,300 plants per hectare.  The PerSe wines are made in tiny amounts with the smallest wine coming from just 312 vines.  They vinify with native yeasts and minimal intervention in the winery and the vineyard.

Inseparable comes from the heart of the 2 blocks planted down in the main Monastery vineyard. Traditionally VSP trellised, it sits over calcareous sands and gravels and therefore is a low yielding vineyard that finally ends in a limited number of bottles annually. This is a 100% Malbec from the most renowned appellation today in Argentina as well as one of the best terroirs in South America. Harvested at the end of March by hand, the grapes were destemmed and vinified with minimal intervention in small 3,000 litre concrete vats. 2019 was a cold and dry year, which allowed high acidity levels along with moderate sugar content. After 35 days of extended maceration with the skins, we racked the wine and aged in the same cement vats for 12 months, after which we bottle without any fining or filtering. The wines of this vintage are very fine and precise, with great aging potential. We are very happy and being our second harvest of Inseparable, the improvement in the wine give us optimism about the huge potential seen in the vineyard.
