This tasting is an invitation to explore a house that is both young in spirit and deeply rooted in the traditions of Champagne. Founded in 1981, Bruno Paillard set out with a singular ambition—not to chase volume or trends, but to craft wines that are a pure expression of their origin, shaped by the chalky terroirs that define the region’s greatest champagnes.
Alice Paillard, now leading the family house, describes their approach as one of unwavering precision—from vineyard to cellar. The wines of Bruno Paillard are not about opulence or easy accessibility; they are about depth, purity, and the ability to evolve with time.
At this tasting, you’ll experience firsthand how this meticulous philosophy translates into the glass. From their commitment to sustainable viticulture to their pioneering practice of printing disgorgement dates on every bottle, Bruno Paillard has built a house where every detail matters.
Leading us in this tasting will be Master of Wine, Erin Jolley.
BACKGROUND
Step into the world of Bruno Paillard Champagne—a family-run, independent house that makes sparkling wines with a highly personal style characterized by stringent quality control at every process stage.
For decades, this Maison has been dedicated to crafting bubbles of exceptional purity and elegance, starting with a simple but powerful philosophy: only the very first pressing of Chardonnay, Pinot Meunier, and Pinot Noir is used, ensuring that every wine bursts with the purest aromas and color.
The vineyards, spanning 25 hectares across 89 individual plots—including six Grand Crus and five Premier Crus—are nurtured with sustainable, organic methods. The geographical location of the vineyard, the orientation of its plots, and the nature of its soils determine which varieties are planted where. Plantings comprise 50% Pinot Noir, 37% Chardonnay, and 13% Pinot Meunier. The average age of the Maison’s vines is 32 years old.
No pesticides, careful soil stewardship, and a commitment to letting nature express itself are at the heart of their viticulture. Each cru is vinified separately in either oak barrels or stainless steel tanks, allowing the unique personality of every parcel to shine through.
In a state-of-the-art, above-ground cellar, the wines are aged two to four times longer than the standard minimum, with some selections maturing up to 15 years. This extended aging deepens their complexity while preserving their lively acidity. Complexity must not be confused with heaviness; rather, it is more about elegance.
A key moment in each bottle’s life is the disgorgement, a crucial process that Bruno Paillard was the first Champagne house to print the disgorgement date on every bottle. This simple detail invites the consumer to decide the perfect moment to enjoy the evolving champagne.
All Bruno Paillard Champagnes are Extra Brut with a very low dosage, maximum. This contributes to respecting the original purity of the wines and ensures energy, tension, and length can be expressed.
Founded in 1981 by Bruno Paillard—a man born into a lineage of brokers and growers dating back to 1704. At just 27, Bruno sought to create a champagne that went beyond convention in terms of purity and elegance. 'His ambition has never been size or volume, but rather to produce wines that strongly express their origin, by making a very precise choice: that of the chalk terroirs.' Alice Paillard, Icon-Icon, 2022.
Now, with his daughter Alice joining the family business, the legacy continues to evolve while remaining deeply rooted in tradition.
